Sunny Side Up Salad


Attention: The best salad dressing is a sunny side up egg, sprinkled with white wine vinegar and salt and pepper, draped over a salad and then mixed up so the semi-cooked yolk emulsifies a little with the vinegar and forms an impromptu dressing. Best lunch ever.

Unh!!! That might have to be my new breakfast. Is it weird to eat arugula for breakfast?

Well, I don't think it's weird. But Lawson commented specifically on how sad this lunch of mine looked -- just an egg on leaves (he was eating cereal, I think). So maybe not everyone would be on board our Arugula for Breakfast train.

I am completely on board with arugula for breakfast, but not the runny egg. I could see having a chopped hard-boiled egg and crumbled bacon on arugula---
